Roasted Chickpea and Broccoli Burrito

Roasted Chickpea and Broccoli BurritoRecipe from Thug Kitchen

3 cups of cooked chickpeas  (2-15 ounce cans, drained)
1 large yellow onion
1 red bell pepper
1 large crown of broccoli
4 cloves of garlic
1 lime
Spice Blend:
3 tablespoons olive oil
1-2 tablespoons soy sauce
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon ground coriander

I love this recipe. I like more sauce than what it calls for, probably almost five times as much.  I added Island Soyaki, soy sauce, and mango teriyaki sauce.  I also experimented with putting lime juice in halfway, in addition to right before eating it.  This worked pretty well.   I also add in more chili powder, and will add in even more next time, wasn’t very spicy.  I love onion! So I used 1.5 red onions.   This is too good to eat in a burrito.  I just put it in a bowl and add avocado and cilantro if I have it, and eat it.
