Banana Mini Muffins

Recipe – Clean Eating: Banana Muffins by Maria Kang

Can we all take a moment and appreciate how fucking awesome this mini muffin looks with its reflection of its own mini self.


“Wet ingredients (mix FIRST. Then add the dry ingredients)
3 bananas mashed
1/2 cup granulated sugar
1 egg

Dry ingredients (mix together in separate bowl)
1.5 cups of flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt

Place in 375 degree oven for 10-15 minutes. (it cooks faster when you use miniature muffin tins) WHICH, btw, I DO use for most of my baking. It helps with portion control. I can usually make 27 mini muffins with this recipe. Each muffin averages out to 50 calories and 10-12 grams of carbs.”


Not being a baker, I have to follow recipes pretty much exactly.  Which I did.  And they turned out delicious!   I actually had to google if it’s normal for the wrappers to not come off very easy.  After extensive research I’ve concluded that.. yes, sometimes.  Supposedly if you let them cool down, or perhaps if these had more butter it would be easier.  But it’s not.  I lose a good chunk of the muffin to the wrapper each time.   So I’m torn between no wrapper, and losing some muffin to the pan.. and having to wash the pan harder.. or dealing with the wrapper conundrum.  I made this batch 50/50.
