Testing out a new recipe. Cold Cucumber Soup
Easy, simple, pretty good, although a little plain. Not sure I would make again. Was looking up recipes for cucumbers. I put them in a stir fry the other night and was pleasantly surprised by how good they were. I had only ever eaten them cold. Found this recipe along the way for different ways to use cucumbers.
- 2 large cucumbers
- 1/2 cup chopped green onion
- 1/2 teaspoon salt
- 1 teaspoon dried dill weed
- 1 container (16 ounces) plain yogurt
Directions: Step 1
- “Peel cucumbers; cut lengthwise in half and remove seeds. Cut into pieces.”
Q: How do you remove cucumber seeds? There are a lot of them. I tried to just scrape them out a bit with my knife and didn’t do very well, figured they were harmless so left them in. Apparently there is a method for this.
Put all that stuff in the food processor!
Consider it done.
